Dragon-A-Day Online: Day 508: (Fairly) Basic.

(Fairly) Basic Bread:

Proof ½ tsp yeast by adding it + 1 tsp sugar to ½ cup water. If it foams, the yeast is alive.

Mix 4 cups (1 ½ whole wheat, 2 ½ unbleached all-purpose) flour, 1 tbsp sugar, 1 egg (if desired) a cupped handful of salt, 1/3 cup of oil, 1 cup warm water, proofed east + 1 pinch of dry yeast. Use a mixer if you have it, or start w/a spoon, then knead.  You want the dough to be tacky*, that’s slightly sticky, but not that it comes away on your hands when you touch it. Roll into a ball. Let it rise in a warm area in a greased bowl for a few hours, then put it in a greased pan; stretch and twist it as you do.
Let it rise again, until it’s about double-size, then bake at 350 for 30-35 minutes (check at 30). Turn it out when it’s done, butter top as desired.

It was either this or something based on the fact that while we were working on this and waiting for it to rise, my Mom and I listened to the entire audiobook of How To Train Your Dragon, which in both of our opinions, would have made a better storyline for the movie of the same name.

*If too sticky, add flour, if too dry, add water!
